is there a list of the built-in scales somewhere? (Ideally together with the definitions of those, but the names would be a start!) I guess it's on github somewhere, but a pointer would be appreciated!

The built-in scales can be found via github.
I've extracted them from the source code, and posted them here:

I hope that's an easier way of finding the scale definitions now! :-)
Try the browsing the scales from the scale mode key. When you select a scale it will display the intervals. Not necessarily easier than reading a text to learn from, but convenient and your user-defined scales will be listed also.
There is also a useful web based utility called EigenTab
