Think that is not possible directly from the Stage GUI but you should be able to connect the midi input to the property that is controlled via a stage control - and then the Stage control should also be animated.

E.g. type that in the EigenCommander (with Eigenbrowser open):

eigenbrowser , midi input 1 hey midi port browse

Then select your midi in

Then look up the property of the desired Stage control (which is written in a tool tip if you hover over with the mouse) and type (e.g. for console mixer 1 master volume fader):

plumber hey midi input 1 controller 1 to console mixer 1 master volume connect

which should connect CC1 to master volume 1 -> the appropriate fader should be bound to your mod wheel now.

Additionally the controls can be automated via OSC (the address of the controls is essentially the text in the tool tips)
